Spicy Coleslaw

This recipe I came up with last year to go with my BBQ’s in the summer, it makes a very large tub so adust amounts if you want to make a smaller portion. I keep this in the fridge for a couple of days, if thers any left overs.

4.5 Syns for the whole tub and less than 1/2 a syn per serving

Ingredients

  • Thinly slice half a white cabbage
    1 Large thinly sliced onion
    Grated carrots 3
    4tbsp Hellmanns lighter than light mayonnaise 2syns
    4tbsp fat free natural yogurt
    1tbsp horseradish 1 syn
    1 tbsp mustard 1.5 syns
    Salt and pepper

Method

Mix all together and put in the fridge
This does make a large tub which is good for BBQS, adjust amounts to suit your tastes and quantity. Sometimes I add raddished sliced to give it some earthy flavour.12928173_1726748714236885_2299923599467977097_n.jpg

Syn Free Bolognese

I make a very large pot of this as it goes down well in my house, plus I love the left overs the next day or to freeze. Jalapinos goes really well with this, shop bought Bolognese sauces contain 6+Tsp of sugar this is much more tasty and minus the sugar!

Ingredients

(All in the picture)

  • 750g 5% Fat Beef Mince
  • 2 Onions
  • 1/2 Aubergine
  • 1 Large pepper
  • Mushrooms
  • Garlic or Garlic paste 2Tbsp or 4 Cloves
  • Large Caron of Pasata
  • 2 Beef Stock Cubes
  • 2 Tbsp Mixed Herbs
  • Good Few Plashes of Woster Sauce
  • 1/2 Tbsp Paprika
  • 3Tbsp of Tomato Puree

Method

Fry all veg in frylight and garlic until soft

Add the Beef mince until browned well

Add all other ingredients and 1 cup of water, mix well and simmer for 30 minuites.

Serve with spaghetti and cheese either use your healthy A choice or syn 6 for 40g reduced fat.13092123_1741320499446373_3514762585729516936_n

Actifry Cooked Omlette

This is great for busy days, no need to check, turn, flip or grill. The hole in the middle is perfect for the beans too!

Ingredients

  • 4 Eggs whisked
  • Sliced Ham
  • Sliced Red Onion
  • Sliced Mushrooms
  • (Add peppers or spiniach if you wanted)

Method

Fry the Actifry pan with frylight

Pour in all the ingredients and cook for 10 minuites and serve

 

Easy Syn Free Tomato Pasta

Great for a tight budget and cook extra for lunch the next day

Ingredients

  • Dried Pasta
  • 1 Carton on Pasata
  • 1 Red Onion
  • 1 Pepper
  • Mushrooms
  • 1tsp Paprika
  • 1tbsp Mixed Herbs
  • 1 Beef Stock Cube
  • 2 Cloves of Garlic
  • Pinch of Black Pepper

Method

Boil the pasta as per packet instructions

Im a frying pan fry in fry light, onions, mushrooms, garlic and pepper until soft

Add the rest of the ingredients and fill half the carton of empty pasata with water and pour in, mix well and leave to simmer for 10 minuites.

Drain the pasta and stir in the sauce

Syn Free Lemon Sorbet

This is me testing for sunnier days! Its really refreshing and not too over powering with lemon.

Ingredients

  • 1 1/2 Lemons and their rind finely grated
  • 1 Cup of Sweetener
  • 6 1/2 Cups of water

Method

In a saucepan warm the water and sweetener until disolved, add the lemon and rind and stir in.

Pour into a container and freeze, using a fork stir every hour will take around 5-6 hours to set, do not leave as it will freeze solid.

Tandoori Chicken Syn Free

Tandoori chicken syn free I use the same recipe for Lamb and Steak too, great for BBQ’s.
Cut raw chicken breast into chunks

Ingredients

  • For the marinade 1/4th tub of fat free yogurt
    Chopped fresh coriander
    1 chopped chilli
    Chopped garlic and ginger (4 cloves of garlic and a good chunk of ginger)
    2tbsp syn free tandoori powder
    1/2 tbsp hot paprika
    Juice of 1/2 a lemon
  • Chopped chicken breast

Method

Mix all ingredients in a large bowl or container and leave in the fridge for atleast an hour

Pre-heat the oven to 200 degrees, place the chicken in an oven dish sprayed with fry light
Cook for 20-30 mins until the top of the marinade starts to char
I do the same marinade for lamb tandoori too
Served with rice roast vegetables and syn free garlic dip

Sweet Potato Cottage Pie

I used a mix of white potatoes and sweet potatoes for the topping but you can just use white if you prefer. Hearty family dinner, all plates clear including my two todlers.

Serves four and syn free if using the cheese as your Healthy A choice or count six syns per serving.

 

Ingredients

  • 5% fat beef mince 750g
    1 large onion
    1 large chopped carrot
    Add 1 tin of mushy peas
    1 beef stock cube
    1 cup of water
    Black pepper
    2 Tsp bistow gravy powder (1syn)
  • 40g Low fat cheese grated

Method

Boil potatoes, drain and mash
In a large frying pan, fry in fry light
5% fat beef mince,onion, chopped carrot

Once browned add the mushy peas, beef stock cube, water, pepper and gravy powder. Mix well and leave to reduce on a simmer for 10 minuites.

Add the mince gravy mix into a large oven dish and top with the mash, add grated low fat cheese. You can either syn this or use as your healthy A choice.

Bake at 180 for 20-30 minuites until the top is crisp and golden

Baked Oates

Ideal for a filling warm breakfast on cold days, quite easy to make.

If using the porridge as your healthy B choice this is only 1 syn, if not count 6 syns for the porridge.

 

Ingredients

  • 35g Plain Porridge Oates Dry
  • 1/2 Vanilla Muller Light
  • Few drops of Vanilla Essence
  • 1 Egg
  • 2 Tbsp Sweetner
  • 100g Raspberries

 

Method

Mix all ingredients into a bowl, transfer into a small baking dish and cook at 180 for 35 minuites, serve with fresh fruit and the other half of the muller light.

Oaty Biscuites

Still having my healthy B choice I decided to make some biscuites to snack on using what I had at home.

If using your Healthy B choice eating half of these work out 0.22 syns each, if not they are 1.5 syns each.

Ingredients

  • 70g Plain Porridge (dry)
  • 2 Eggs
  • 1 Tbsp Mincemeat
  • 1/2 Tsp Ground Ginger
  • 1/2 Tsp Cinnamon
  • 1/2 Tsp Nutmeg
  • 2 Tbsp Sweetner

Method

Mix all together and spoon onto a baking tray lined with greasproof paper and sprayed with fry light

Bake at 180 for 10 minuites turn then over and bake for a further 5 minuites

Syn free scotch eggs

This recipe i had an idea and went on what i felt would work, everyone who i have cooked these for loves them. I have also used the same ingredients to make them into mini scotch eggs, very filling and great for packed lunches.

If using the wholemeal bread as part of you Healthy B choice then these are syn free, or you will need to syn the bread acording to how many you eat.

 

Ingredients

  • 500g 5% Fat Pork Mince
  • 5 Eggs Boiled
  • 1 Egg For Egg Wash
  • 1Tbsp Garlic Granules
  • 1/2 Tbsp Mixed Herbs
  • Fry Light
  • Large Pinch Black pepper
  • 2 Wholemeal Rolls or 2 Slices of Wholemeal bread

 

Method

I used a food processor but if you dont have one mix the meat by hand, and crumble the bread into bread crumbs.

Whizz up the bread into crumbs and place in a bowl

Mix the pork, mixed herbs, garlic granules and pepper in the food processor to blend it together.

Roll 1/5 of the meat into a flat circle and put it around the boiled egg so that it covers the whole egg, egg wash and roll into the bread crumbs.

Place it onto a baking tray sprayed with fry light and spray the raw scotch egg with fry light, repeat until all eggs are covered.

Cook at 180 for 40minuites
